Duties

• Operators of fish processing machines have the following responsibilities:
• Set up and run machines for cleaning, cutting, cooking, smoking, brining, dehydrating, or otherwise processing fish.
• Set up and run machines for canning, bagging, boxing, and other forms of packaging fish.
• Examine products and packaging for flaws and compliance with corporate guidelines.
• Make any necessary adjustments to the machine.
• Keep track of production details including quantity, weight, date, and product type.

Cleaners and cutters for fish plants:

• Prior to sale or additional processing, cut, clean, and trim the fish.
• Using a knife, scrape away scales, cut fish, separate fillets, and remove scrap pieces.
• Check the number and size of fillet pieces on fish fillets to determine the best number and size.
• Sections should be cut to size and placed in a weighing container.
• To prepare lobsters or other shellfish for canning or subsequent processing, disjoint and remove the meat.

• When handling fish and shellfish, workers may be exposed to infectious bacteria and viruses.
• Injury can occur when working with equipment, instruments, machinery, or power/hand tools.

• Strong or hazardous odors may be present in the workplace.
• Contact with water is a part of the job.

Qualifications, education, and training

• It’s possible that some secondary school education is required.
• It is necessary to have on-the-job training.
