The Chef de Partie (Station Chef) plays a vital role in culinary team management, ensuring excellence in food preparation and quality standards for Hilton guests and members. This position requires hands-on leadership to supervise team members and assist with food cost controls, contributing to an elevated guest dining experience.
Responsibilities:
As a Chef de Partie, you will lead food preparation and team management while supporting food cost efficiency. Key duties include:
- Culinary Supervision: Oversee kitchen staff, provide training for culinary members and apprentices, and ensure adherence to quality, quantity, and presentation standards for all restaurant and banquet production.
- Menu Development: Contribute to new menu items and daily specials, working closely with the Executive Chef to meet short and long-term culinary goals.
- Inventory & Safety Management: Conduct daily inspections for quality, maintain inventory levels, ensure safe and hygienic kitchen practices, and prevent overproduction and food waste.
- Guest Experience Enhancement: Anticipate and respond to unique menu requests to elevate the guest dining experience.
Qualifications:
Ideal candidates for this Chef de Partie role will possess the following qualifications:
- Culinary Certification: Canadian Certificate of Qualification (Red Seal) or equivalent required; Food Handler Certification mandatory.
- Education & Experience: Minimum 3 years of progressive experience in a high-volume culinary environment, including at least 1 year in a Station Chef role. A culinary diploma or equivalent is advantageous.
- Skill Set: Strong knowledge of classical and modern cuisine, banquet production, and current culinary trends. Ability to work flexible hours, including evenings, weekends, and holidays.
